Freeze dried eggs

Eggs are light, fluffy, and lots of eggs can be done at a time.

We did whole eggs two ways. One was Crack, whisk, and pour. The second was blend, froth, and pour. Both ways had about the same results.

20 eggs per tray. End result was about 1250G of freeze-dried eggs.

To reconstitute, add a bit of water u til they are runny eggs again then cook as usual. Can't taste the difference.
